A quick and easy recipe for delicious bites with a matcha twist! In this recipe we use crackers, goji berries, marshmallow and pistachios, however feel free to substitute any of these with something else of your choice. For example instead of pistachio you could use other type of nuts like almonds or hazelnut. Instead of goji berries you could add cranberries or even candied ginger, and so on!
For this recipe we used The Zen Tea Organic Emerald Matcha Ceremonial Grade. Alternatively, you can use The Zen Tea 18 - Intense Green Matcha
The Recipe
INGREDIENTS:
- 5g - The Zen Tea Emerald Matcha
- 50g - Unsalted butter
- 140g - Small marshmallow
- 8g - Milk powder
- 130g - Ritz original cracker
- 50g - Goji berries
- 30g - Chopped pistachios
METHOD:
1. Melt unsalted butter in a large non-stick saucepan over low heat. Add the marshmallows and cook gently until they are completely melted.2. Add milk powder and The Zen Tea Emerald matcha powder, stirring constantly until all blended. Take the pan off the heat and immediately add roughly crushed crackers and goji berries, mixing lightly until all well coated.
3. Prepare a baking tray or tin with parchment paper, dust over milk powder, put the mixture into the tray. Put another piece of parchment paper on top, press it into the corners and shape it so that the thickness is about 2 cm and the top is flattened. Let it cool down.
4. Cut into bite size and enjoy!
